Press wine

For François Mauss : It’s already been 17 years (since 1992) that we put our press wine in the second wine, even in the 3rd wine.
The work done allows us to exclude it from the top cuvee which has already taken the best.
It’s a technique. Some, especially in Medoc, do the opposite.
Go figure François!
